In north , they use tagar / boora instead of powdered sugar while making pedas and ladoos..It gives more taste to it..its simple and can be made by every one at home

Method:
- In a kadai or thick bottom vessel, add the sugar and water and switch on the flame to medium
- Stir it in btw so that sugar gets diluted easily
- When the sugar gets diluted completely, it starts to buhhle
- From this moment we have to check the consistency of the syrup
- The consistency must be 2 or 3 thread ...
- For this either u take a little bit of hot syrup between ur fingers, press and release the fingers. ( take care, the syrup will be tooo hot..so just give a blow with ur mouth than take in between the fingers)
- If two threads are formed , then remove it fromt the stove
- Otherwise stir continously... again after a minute ..repeat the checking
- The other easy method is ..pour a drop of syrup in a bowl having littl bit water, after a few seconds.. if it starts to form like ball..then its oke...
- After removing from the stove, keeping the vessel on the shelves, continue stirring, it starts to turn opaque and then to white crystals like sugar...

- Once it starts to form crystals, add the ghee to it..it makes the boora tasty and smooth

- Once its cooled completly....keep it in container..THIS MEASUREMENT GIVES 3 CUPS OF TAGAR
- Always try to choose good quality of sugar
- If u feel there is dirt in the sugar, while making the syrup, when it starts to boil, all the dirts will come up ..then add a tblsp of milk..it will starts to sediment on the sides of the vessels as lather...
- Remove it with a spatula
