CARROT HALWA / GAJAR KA HALWA

An Indian dessert which always gave me wah wah from others...i am really crazy abt this dessert.As most of the kids , i too hated the carrots and it remained until i came to delhi and learned to make halwa out of it.Normally its made during special occassions , but i never wait for it.When winter starts plenty of juicy red carrots will be available.These carrots are best for halwa.They naturally will have a sweetness.Though this is very rich dessert , those who control the diet have to take very little.My son too now a days like the halwa.The only hard work for us it to grate and if ur food processor help the grating then its great!..Yeah of course it takes time to finish. Any way thinking of the taste make every effort easier. Some adds khoya to it , to increase the qty . But i didnt add any other products .Trust me its soooooooooo   yummyyyyyyy


Ingredients:

CARROT
1 KG
MILK
½  LTR
SUGAR
¾ CUP
GHEE
3-4 TBLSP
CASHEW NUT  AND RAISINS/ CARDAMOM
1TBLSP  EACH /3 NOS

Methods:


  • Wash and clean the carrots and remove the roots in it.
  • Grate the whole carrots





  • In a pressure cooker,add the grated carrots and milk
  • Give 2 whistles  and switch off the flame
  • Once the pressure goes, cook the carrot in high flame with lid open
  • The carrot must be cooked in the remaining milk  and add sugar, cardomom seeds  to  it and the whole milk nust get disappeared






  •  Once this is done switch off the flame
  • In a nonstick kadai, add 1 tsp of ghee and roast the cashewnut and raisin
  • Remove it and add the remaining ghee to the kadai
  • Add the cooked carrots to the ghee and roast it for at least 1/2 hr in low flame.




 
  • Stir in btw.The colour of the halwa will turn to silght dark reddish.
  • The halwa will get seperated from the kadai
  • Now remove it from stove and add the roasted cashew and  raisins.
  • Carrot halwa ready....
 NB:
  1. To increase the taste and qty add khoya while roasting
  2. We can replace the milk with condense milk or can add both together in equal proportion
