STRAWBERRY PIE

When ever we buy strawberries mostly my son will have it with sugar or mixed with other fruits or smoothies. I was thinking of making a pie with strawberries..but truly speaking i never made before or didnt have it before.So was in a dbt to make it or not.Yday decided to make and while my son was having his studies, i got into the work and in btw when he peeped to the kitchen , found me engaged in making pie. He hugged me with joy.Normally where ever i searched for pie recipes , i found of adding gelatin and i dont want to add it even in my area its not available too..I substituted it with cornflour. And the most i liked was the taste of the base..WOW...finger licking!!!!.Try it..

Ingredients:

For Base:


Maida
1 & ½ cup
Butter cubes ( chilled )
1 cup
Salt
¼ tsp
sugar
1 tblsp
Ice water
4-5 tblsp


 For Fillings:



Strawberries
5 no ( chopped for glaze) +  5 nos ( cut into 4 pieces)
Cornflour
1& ½ tblsp
Sugar
4- 5 tblsp
Vannila essence
1 tsp
Lemon juice
1 tsp


 For Whipping:



Full cream
½ cup
Icing sugar / (powdered sugar+1 tsp cornflour)
¼ cup

 


Method:

1 )Making of BASE:

1.In a bowl add all the ingredients except water or mix with a a food processor or with mixer jar .( This will make the flour and butter to get mixed evenly )




2. Transfer it to a bowl or flat vessel and  add  water little by little.
3. The mixture must be like bread crumbs
4. Lastly gather the whole mixture to form a dough, no need to knead like we do for rotis..Just gather and slightly press to form a dough.
 5. Take care while using water.
6.The dough must be to the hard side.
7.Cover it with a plastic wrap and keep in the freezer for 45 minutes.





2) Making of FILLINGS:

1. Wash and remove the green part of the strawberry, cut it into pieces.
2.  Smash it with a smasher , then add cornflour, sugar , vannilla essence and lemon juice.










3. Keep it  on the stove, and allow it to cook in med fire.
4. Cook until it starts bubbling and becomes thick. Make little more thicker than i have done.

5. Once done, allow it to cool, and once completly cooled ,then add the chopped remaing strawberries and keep aside.This is our strawberry glaze.





3) Making whipping cream
1.For better result ,keep the vessel and the whip in the freezer for 15 minutes before whipping .
2. Add the cream and icing sugar to the bowl and whip continously for few minutes





4) Making of pie:

1. Take out the dough form the freezer after 45 minutes and remove it from the plastic wrap and allow to rest in room temperature for  5 min.

2. Divide the dough into two equal parts .By this amount of flour u can make two pie
3. Now generously put some  flour where u are going to roll the flour.
4. The dough will be little bit hard to roll, just beat it with roller and start to roll it round.






5. Size of the rolled dough must be more than size of the pie tray, so checking that just invert the tray over the dough and check the size.The streched dough must be more than 1" of the tray .






6 .Now To transfer dough to dish, starting at one end, roll dough around rolling pin then unroll over dish.as shown in the pic






7.Gently press down the dough to the tray, take care that it might get broken.Dont worry if it breakes too..We can add extra dough from the sides and fill that area






8. Now gentlty press the dough to the sides of  the tray and remove the extra dough with scissors.Press the edges too...












 9. Make pierce over the whole base with a fork.







10. Place an aluminium foil over base and fill dried beans or rice on it or keep the pie weigh over the base
11..Keep this in the fridge for 20 minutes.
12. Pre heat the micowave oven to 220 c
13. Bake the cooled base for 15 minutes.




14. Mean while make either beat yolk of an egg and cream  or milk and honey ..( i did with milk and honey )




15. Once the base is baked, take it from oven and remove the aluminium foil together with the pie weigh./ beans.
16. Base will be golden brown then, brush the entire base with egg wash or milk and honey wash.
17. If using the egg wash, it prevent from making the base soggy.





 ( in second pic i had brushed with milk and honey , its not clr in my camera...and forgot to take pic while brushing sorryy..:P )

18. Keep the pie again to bake in 180 c for 15 minutes.
19. Once the base gets cooled ,fill the base with strawberry fillings that we had made.



20. Top with whipping cream.
21. Keep pie in the freezer for atleast 2 hrs.

Tips:
     1.       Never  compromise with the ice water and chilled butter while making the dough.
     2.       Whiiping cream is optional.
     3.       Keep it in freezer for more than 2 hrs is a must unless the strawberry glaze wont solidify.
     4.       Maida can be substituted by wheatflour.
