RAWA KESARI

Last week i tried fruit kesari for first time.All the ingredients expect pineapple was thr today.My husband is not a sweet lover , but liked the fruit kesari very much. As today is valentines day , thought to make a sweet and as pineapple which is the main ingredient is absent, decided to make plain kesari.I have added colour in this , but normally i avoid it .So its optional.
Ingredients:


RAWA / SOOJI / SEMOLINA
½  CUP
SUGAR
1 CUP
WATER
1 AND ½ CUP
GHEE
¼ CUP

I forgot to write the colour and cardomom.. These are optional. If interested add a pinch of both


Method:
 
1.In a kadai, add the ghee completely, then slightly roast the cashew and raisins.( no need to get brown in colour )
2. Once it done, add the rawa to it and stir for few minutes until a roasting smell comes .






3. Mean while boil the water .
4. Once the rawa is roasted, add the boil water slowly to it .Stir continously to avoid the formation of lumps.
5. This must be done is slow fire.




6. Stir until the rawa starts to leave the sides.
7.Then add the sugar and stir
 8. When the sugar melts , add the kesari colour and powdered cardomom ( i didnt used it)



 
9. When the rawa starts to leave the sides , switch off the fire




10. If want to cut in shapes, transer it into a greased plate or vessel
11. Once it gets cooled , cut into desired shape.


TIPS:
1 . Water can be replaced with milk.

2 . If using home made ghee then it will have
more taste and flavour.

3. Yellow colour can be replaced .

4.  Roasting determines the texture of kesari.
