SWEET CORN SOUP

Soups always get a warm welcome in my house.Yday evening i made sweet corn soup and it was a super hit. Cold evening with soup!!Yummmyyyyy.....Normally during market days, sweet corns are purchased .We get  detached corn kernels from its stem.so easy work,just wash and use.I used to make CUP CORN..and that too is favourite to all of us....

Ingredients:

CORN KERNELS
1 CUP
CORN FLOUR
1 TSP
MILK
1/2  CUP
WATER
1 AND ½ CUP  + 1 TBLSP
GREEN CHILLY
1 NO
BLACK PEPPER PWD
½ TSP
SALT and SUGAR
½ TSP ( AS PER TASTE ) / 1/2 TBLSP
CORIANDER LEAVES
1 TBLSP CHOPPED
SPRING ONION
1 TBLSP CHOPPED

Method:


1. If  seperated corn kernels are not available, just remove the skin and silk strands and using knife to detach the corn kernels from the stem., wash thoroughly and strain with a strainer.
2. In a pressure cooker, add the corn, sugar and water.
3.Cook this for 3 - 4 minutes or for 1 -2 whistles
4. When the pressure goes, take 1 tblsp of corn and keep aside.





5. Once the corn gets cooled, blend it.If using a hand blender, then blend the corn with water.and if using the mixer, then strain the corn and first blend them.If neccessary add the strained water.




6. Now strain the blended mixer again. Remove the strained corn skins and used the liquid part.
7. Add the remaining cooked water and milk to it , together with green chillies.coriander leaves , spring   onion, and the 1 tblsp corn that we have kept aside.




8.Allow it to cook in sim- mid fire, for 5 minutes.
9. Then disslove  cornflour in 1 tblsp of water and add this to the soup together with salt and pepper.




10.Give a boil and when the soup thickens , switch off the flame.

TIPS:
.       1.  It is not necessary to strain the blended corn.But i prefer to do so to give a smooth soup.

     2.       Green chilly can be  avoided

     3.       If thick soup is not in preference can avoid cornflour step too. But i recommend to add it to give a perfect taste of soup.
