GOTHAMBU DOSA / WHEAT DOSA

Easy way to make and easy way to fill the stomach...healthy too...Since it doesnt need any fermentation, u can make instantly..so when u are in hurry, this is best way for breakfast...i used to make this even in evening snacks...i have made a simple one...u can add onions too....have it with chutney...

Ingredients:

     
1. Wheat flour   
1 cup
2. Jeera / cumin seeds
1/2 tsp
3. Mustard Seeds  
1/4 tsp
4. Red chillies  
3 nos
5. Asafetida/ kayam
1/4 tsp
6. Salt        
as req
7. Sesame oil    
1tsp
8.Curry leaves    
1 stem
9. Water  
2 cups


Method :

1. In a bowl, take flour, add asafetida, salt , crushed jeera, curry leaves which are sliced with hands itself...
 2. In a tadka pan, heat oil, add mustard seeds, when it pops up, add the redchillies ( which are broken into small pieces)...



3.Add this tadka into the bowl having atta, and mix with the spoon...add water to it...make a solution of it....the consistency must be as thin as dosa dough.... 


4. Heat a non-stick tawa, when its hot enough, take a ladle full of dough and spread it on the tawa  just like we make dosa..but remember never give too much pressure to the ladle, then the dough will gets stick on the ladle itself...and also remember the tawa must not be too much hot..keep the flame to be in medium...
 5. Now drizzle some sesame oil over the dosa and allow it to cook, once u see the edges starts to detach slightly form tawa, flip it  to other side..



6. Allow it to cook ,it may take 3 more minutes, as its drizzle with oil, that side will gets roasted slightly...

7.Godhambu dosa is readyyyyyy

MADHURA KOZHUKATTA

My favourite snack...it reminds me my school days....when returns from school at 4 o clock, i really starts to guess what will be their for snacks...During childhood days, its only in the evening ,when me and my brother have food with out any pressure from my mummy....we both loves sweet snacks, most of the time it will be kozhukatta, ada, neypayasam, unniyappam, bread toast etc...so when ever i make these , it takes me to my childhood....yday i made kozhukatta and the same attittude was seen in my son too...So here the recipe ...

Ingredients: 

1. Rice flour ( idiyappam podi) 
2 cup
2. Jaggery  
abt 7 blocks ( small)
3. Grated coconut  
1/2 portion of coconut
4. Dried ginger / chukku  
1 tsp
5.Jeera pwd  
1 tsp
6. Salt    
1/2 tsp
7.Water      
1 and 3/4 cup

Method :

1. In a kadai, add the jaggery and add 2 tblsp of water and heat it and stir in btw and allow to  melt ..
 2. Once the jaggery is melted , let it cool down and pass through a stainer having little big holes, so that the solution passes through it  leaving behind the dirts ...

 
3. Now add the grated coconut , chukku, and jeera pwd to jaggery and mix well..     

After mixing



                                          

 4. In a bowl, take the rice flour, boil water with salt, when the bubbles starts to come, add slowly this to flour and mix with a spoon and make a dough..this must not be soo smooth nor tough...


5. Apply little oil in hand...take some  dough in other hand make a ball of it...
6.Press this dough into flat and at the centre , keep a spoon of jaggery mixture and join the edges and again roll the dough to ball shape...




7. In a steamer or idli thattu, keep this kozhukattas and close the lid and allow it to cook for 5 minutes...

8. Kozhukkattas are ready...!!!!!!!!!
