PEANUT CHUTNEY

My husji's favourite chutney, this is basically from Tamilnadu...We love to have this with dosa idli, or any instant dosas like oats uthappam , Andra pesarattu ..


Ingredients:


Peanuts
½  cup
Garlic
1 big
Red chillies
2 – 3 nos
Mustard seeds
¼ tsp
Curry leaves
1 stem
Asafetida
A pinch
Tamarind
a small piece
Salt
As per taste


Method

1. Dry roast the peanut in med fire. When the peanuts starts to break up then switch off the fire.





2. Once it cools down, rub the peanuts with the hands , the skin will get detached , or any methods that are easy for u.Some times i put the peanuts in a strainer and rub it with the hands, the friction of the strainer makes easier to remove the skin . No problem if some skin remains back.
3. In a mixer jar, ground the garlic, tamarind,  redchillies and then add the peanut.
4. Add enough water according to the desired consistency. Also add the salt .





5. Heat oil in a tadka pan, add mustard seeds, curry leaves, once the spluttering ends add asafetida and switch off the fire.


Notes:

     1.       Always  add water while grinding otherwise the paste and water doesnot get mixed up well.
     2.       If  ur  making the chutney watery then the red chillies must be used in max. 
     3 .  Peanuts can be grounded with skin too.. its of personal choice.

HOME MADE PANEER TIKKA PIZZA

Pizzzzaaasss, the dish that had been an Italian had transfered its form to indian.This tikka pizza is one of the transfered one.Though only the topping is transfered.Basic items are all same. Though its the fav of my jr , We rarely go to pizza hut or dominos.Normally gives it as a treat for his bdays , when he achieves good remarks and all. Sr is not much fan of it, but he loves the homemade rather than ordered one.... Myself joins the jr ..:P..But even i dont entertain for making or ordering ..Now his vaccations started and thought to make it. I assure u that everyone can make it at home with the same taste of store one and the expense is less when compared to hut or domi...:)..So try this u can!!

 

Ingredients:


 For Base making
Maida
1&1/2  cup
Olive oil
1/8 cup
Dry active yeast
1 tsp
Warm Water
¼ cup
Sugar
1tsp
Salt
½ tsp
Milk
¼ tsp


For Tikka making
Paneer
100 gms
Curd
1tsp
Black pepper pwd
1 tsp
Lemon juice
1 tblsp
Salt
½ tsp or as per taste
Ginger garlic paste
½ tsp

   For Toppings


Onion and Capsicum
1 each
1& 1/2 tblsp
Tomatoes
2 small / 1 med
Mozzarella cheese
Qty as per choice should cover the toppings




Method:

For Tikka making
 1.In a bowl, marinate the whole ingredients given in tikka making and keep aside for 30 minutes.





 2.After 30 minutes,  in a tawa, keep the marinated paneer and add little oil over it. Let it get roasted at all sides.



 For base making:
1. If using active yeast, then dissolve it in warm water  together with sugar and salt for 30 minutes and keep it  in a warm place.




2. After 30 minutes, In a bowl, add olive oil, milk and dissolved yeast.





 3. To this add the flour and mix well and gather the flour to make a dough.No need to knead.





4. Keep this dough covered with a wet cloth for 1 - 2 hrs., until the dough increases its size.





5. After the ref time, again knead the dough well  and roll it with the pin slightly.
6. Then keep the dough in the pizza tray  and again spread it with your hands. ( I made the edges lightly rised than the other parts )
7. Make pierce on the base with a fork





Assembling the pizza

1. Apply the pizza sauce over the base
2.  Grate some mozzarella cheese and spread over the base . ( this is optional )




4.  In the burner, roast the bell pepper  holding it with a fork.





5.  Chop the bell pepper, tomatoes ( remove the seeds ) , onion ( diced and seperate the layers )
6.  Arrange all the topping like,panner tikka, bell pepper, onion, tomatoes over the base.





7.  Again put the grated mozzarella cheese over these toppings
8. Pre heat the oven to 180 c and bake the pizza  for 12- 15 mints or until the base gets cooked well and cheese melts.





( My oven is LG and i gave the temperature according to that...)



Tips:
     1.       The time taken for the cooking of pizza vary according to the oven u use.
     2.       I found the same pizza can also be made in non stick tawa.. but as i didn’t  tried that ..
     3.       Topping can be ur choice , making are all same .
